Basic Multipurpose Mix
In large bowl stir then sift until well mixed:
9 cups sifted all purpose flour
1/3 cup baking powder
1 cup+ 2 Tbs dry skim milk powder
4 teaspoons salt
Cut fat into flour mixture until it resembles coarse cornmeal: 1 3/4 cups shortening
Can be stored for up to 6 weeks.
Biscuits
2 cups mix
1/2 cup water or milk
1/3 cup raisins
1 Tbs sugar
1 teaspoon cinnamon (optional)
stir 20-25 times and then knead about 14 times on a lightly floured surface. Roll out 1/2 inch thick. Cut as desired with floured biscuit cutter or in squares with a floured knife. Bake on ungreased bake sheet in a 425 degree oven for 10-12 minutes.
You can change the mix and add more flour in place of the milk powder. Sometimes I can really taste the milk powder, particularly in plain biscuits. You have to use milk in the recipes if there is no milk powder. The night of book club I didn't use cinnamon. For plain biscuits just omit cinnamon, sugar and raisins. The next time I made these I soaked the raisins for 10 minutes because they were pretty dry raisins, so as not to dry out the biscuits. This mix can make pancakes, cakes etc. I have found you can use any Bisquick recipe with this mix. It came from the Deseret Cookbook which can be found at a distribution center, so look there or ask me if you want to know more.
